The seven islands of Bombay were part of indigenous Indian empires like the Silhara dynasty and the Sultans of Gujarat.
By 1845, the seven islands had been merged into one landmass by means of land reclamation projects.
This created the island of Bombay – a new cultural capital where unique street food flavours quickly became world renowned.
